Perusahaan yang memproduksi mie ini masih mengalami kecacatan produk yang melebihi batas toleransi perusahaan. Tujuan dari penelitian ini yaitu untuk mengetahui pengendalian kualitas, faktor yang menyebabkan kecacatan produk, dan penerapan metode Statistical Process Control (SPC). Metode penelitian ini yaitu metode deskriptif kuantitatif dengan pengumpulan data menggunakan wawancara, observasi dan dokumentasi. Pengolahan data dilakukan dengan menggunakan alat bantu berupa flowchart, fishbone diagram, check sheet, histogram, control chart (p-chart) dan diagram pareto. Berdasarkan hasil penelitian terdapat 3 (tiga) pengendalian kualitas, yaitu: pengendalian kualitas bahan baku, proses produksi, produk jadi. Kecacatan produk disebabkan karena faktor manusia, bahan baku, mesin, dan metode. Terdapat tiga jenis cacat yang terjadi pada CV Manunggal Jaya Bandung yaitu cacat ukuran, cacat tekstur dan adonan kotor. Berdasarkan hasil dari control chart (p-chart) diketahui bahwa di peroleh CL sebesar 0.0081, UCL sebesar 0.00961, LCL sebesar 0.00668.
